Hello and welcome to the Tao of Jus. According to Wikipedia, Tao literally means the way, path or route . It can, however, also be known or experienced, and its principles can be followed or practiced.
We are foodies and dedicated kitchen hacks who love to make great food at home and share with family and friends. The Tao of Jus is our home cooked journey we would like to share with you. Take from it what you will and pay it forward.
Tilapia with Fresh Tomato Salsa over Polenta. We got the recipe from a friend of ours who is an Italian Chef Goddess—and this meal is quick, easy and sublime.
Preparing the Tilapia
Salt and Pepper 3-4 fillets of tilapia
Dredge in Flour
Sauté in lightly oiled pan until golden brown
Fresh Tomato Salsa
Dice up a small onion (about a cup) and sauté in a pan for about 5 minutes at medium heat until the onions are translucent.
Add 1 cup chopped olives (we use calamata, black and green olives) and ¼ cup of capers for about 3-4 minutes.
Then add one 28 oz can of tomatoes (drained of juice and chopped if necessary) (I use San Marzano plum tomatoes—they are worth the extra dollar in cost per can.)
Cook for another 5 minutes at medium low heat.
Polenta (coarsely or finely ground dried yellow or white cornmeal)
While the tomato salsa is cooking, boil up some instant polenta in another pot. It’s quick and easy and has a very delicious mashed potato consistency.
(If you do not want to do this, every supermarket has a roll of ready-made polenta. I sometimes slice this up and pan fry it—also very excellent.)
Finally place the fish on top of the polenta and cover with the tomato salsa. Eat and enjoy!
